Peanut (Chicken or Plant-Based) Bowls
I have been outrageously busy lately, and am relying on meals like this more often: it's protein-packed, flexible, and easy to repeat without getting boring.

What you need (loosely):
A base: rice, quinoa, or noodles
A protein: chicken, tofu, edamame, or chickpeas
A few crunchy veggies: cabbage, cucumbers, carrots, peppers
Something fresh: cilantro, green onions, lime
Something crunchy: peanuts or cashews

The sauce (don’t skip this, most important!):
Peanut butter + soy sauce + lime + a little honey or maple + garlic + ginger + warm water to thin. Taste and adjust. It should be a little tangy, a little salty, a little sweet.

How it comes together:
Layer your base, add protein, pile on veggies, and drizzle generously with sauce.
