Every August, I remember why people grow tomatoes.

All year long we slice grocery store tomatoes on sandwiches because that’s what you’re supposed to do. And then summer comes along, and suddenly I remember what a tomato is actually supposed to taste like.

Around here, the first really good tomatoes don’t end up in a complicated recipe. They become tomato sandwiches.

Thick slices of tomato, good bread, mayonnaise, flaky salt, cracked black pepper. Maybe a little basil if it’s growing in the garden.

That’s it.

I know it barely qualifies as a recipe, but I also think that’s the point. Sometimes the best meals are the ones that remind us not to overcomplicate good ingredients.

“Recipe”
2 slices hearty sourdough or country bread
Good mayonnaise
1 large ripe summer tomato
Flaky salt
Fresh cracked black pepper
Optional: basil leaves

Toast the bread if you’d like. Spread generously with mayonnaise, layer on thick tomato slices, sprinkle with salt and pepper, add basil if using, and enjoy immediately. (If your kids are still learning to like tomatoes, I find that orange Sun golds make the best entry point.)
